What is nattokinase?

Nattokinase is an enzyme derived from fermented soybeans (natto). Natto is a popular food in Japan and has been part of the Japanese diet for around 1.000 years. The enzyme has fibrinolytic properties. Nattokinase describes a protein consisting of 362 amino acids. Nattokinase was first described in 1987 by researcher Hiroyuki Sumi, who claimed that nattokinase was not a kinase but a serine protease of the subtilisin group. What exactly does fermentation mean?

To obtain nattokinase, cooked soybeans undergo a fermentation process in which Bacillus subtilis natto is added. Under steam conditions at 42 °C, the bacteria produce nattokinase, an enzyme that digests soybeans, within 3 to 5 hours.

How is Nattokinase produced?
